Bit of a mad idea I had was a graphical update to Daytona beach course to add modern day scenery, buildings, some modern fences etc. Always felt like having it as a true throwback race, similar to the Goodwood Revival but always seems too uncontemporary to quite fit.

It's a cool idea.
But having been to the Goodwood Revival a few times, the current track is too modern for the theme of racing. Needed for the FIA standards required. If you look at the track before it closed to now... major differences.

Just had an out of the box idea, if I ever run out of real tracks I want to make (unlikely unless science takes a huge leap and I'll eventually turn 237...) I might have a go for a street course in Duckburg, complete with Scrooge McDuck's money bin

I think someone from that area (who I talk to semi-regularly) thought about making that kinda recently. Since I don't think they committed to it (yet?) it's not fair to say it's going to be made, or who it is (to prevent them from being asked).
Update the Montreal track with the new paddock and new asphalt because maby Nascar will return in Montreal in 2024.
The grandstand object for this might be able to be made with W and X sections, That's how I did the stands for the Champions Arena (that and optionally doing each row of seating with 3dsimed and autopas).
I'm already cringing just from how annoying it would be to do the LPs for that hairpin. Not impossible though, just might take several tries. That track was supposed to take Cleveland's place on the CART calendar.
