After a long hiatus, I've finally finished it: Apricot Hill Raceway, based on its' appearance in Gran Turismo 3. It is a 2.402-mile road course with 14 turns and varying amounts of elevation. It originally appeared in Gran Turismo 2 and has been in every mainline release except 5 and 7, although it will likely come to 7 in a future update based on an Easter egg from one of the behind the scenes trailers. This has been the most difficult course to get right to date, and I have spent a lot of time trying to make it look like the source material.
Currently, the course features stalls for a full 43-car field, a full pace lap that starts from the pit stop, crowd sounds, working spotter/crew chief sections, and a custom TV1 camera. Future update(s) may add further detail to the course, but on a technical level, I believe it's done.
