How to Practice Racing as a Beginner?

Hello! I'm aware the title sounds pretty dumb, but allow me to explain:

For most of the time with NR2003, I've mainly used as a sim for things like mock seasons / alternate universes. I rarely drove in races myself (I didn't think I was terrible for the most part). So recently I've thought about getting in on the action (like how the game is supposed to be used :)) and attempted a "Dirt to Daytona"-esque career mode from Trucks to Cup, with things like hot seats, silly season and other fancy stuff.
...two races in at 91% in Trucks (later toned down to the mid 80s to no effect), and it seems I was clearly in over my head. Couldn't keep up or make passes at all. Seems I need to improve.

The general consensus is, and rightfully so, practice. Just run as many laps as you can. But maybe I'm overthinking this... I feel like I need a path.

Do I take on short tracks first? Which ones? Or the "easier" tracks like say California or Michigan?
Which physics type do I pick first? How do I transfer between different physics?
How do I learn to drive without assists? I can somewhat manage no traction control but for now stability control is a must!
And setups... that's quite a can of worms for a noob like me... I just stick to the "fast" setup

I'm sorry if this sounds like over-complication, but I'm used to something like Gran Turismo where they set you up with slower cars and more forgiving tracks, whereas here you can experiment with whatever you want. I just need some pointers on how (and where) to start racing, and hopefully the fog lifts after that.

Also I'll point out that I'm using a PS4 controller to drive.

The PS4 controller is your first problem. Buy a decent wheel/pedal combination.
The CTS physics are easiest to drive, but mainly just practice, practice and practice some more and you will get it!
You should try some pre made setups for each track, will help out greatly.. You can always tweak each setup to suit your driving style!

superspeedways are easiest.
testing mode is your best friend.
setups are everything. (learn)
slower is faster.
smoother is faster.
this is not Daytona USA.

I agree with Thugsrock,
And Start by turn down all assist's little by little and eventually you will not need them at all.
