Is it possible to have a race with xfinity truck and cup series at the those 3 mods combined in one and race them at one track, like in some other games like IRacing have different vehicles to race each other?

No. NR2003 differs from a lot of other games because the models are set for that mod, you cannot mix and match,

Technically you could, if you were to create a new mod with the different models from each series in it. The catch is the mod will pretty much only work with four different models. Also, all of the models would have the same physics.

Before you ask, no you cannot make a new mod with the models from the current mods

I'm just curious, but why would you even want to?

Second, this is considered to be more of a SIM than just a video game.
As such, it would not be very realistic to have Cup, Xfinity, Cup or whatever model mixed together

While it would be the same physics, the appeal (to me) would be class/category racing for leagues IMO.

4 models - 1 car, 1 truck, something, something else

I have always wished someone would make a modern imsa mod, with a generic prototype, and generic front, mid and rear engine cars

Why waste your time wishing for a decent roadie mod when there are so many fantastic purposed road series sims out there? You can pick them up so cheaply (GTR2, GTL, etc...) and they don't even require a monster pc to run them?

I have AC, and I have various GT games on my xbox. I just thought it would be really cool. NR2003 doesn't have great physics for other series and the racing rules are not even close, but I love the ease of customization, and it is something I am far more familiar with than AC
