Ok, the Vette's and Cheetah have been updated.. God willing, for the last time. But here's the deal, after fairly extensive testing with the AI at 100%.. (-weekend- mode, so they can run w/o being on top of each other and you can see their actual lap times) By the AI, the 427 Shelby, Cheetah and Vette's are all within a half second of each other.. 427 Shelby, Cheetah, Vette -in that order-. I can definitely drive the Cheetah better then the Vette(s).. It's just not as squirly. But according to the AI, you should be able to run the same times, within a couple 1/10's..
Now, the Jag E-type Lite is easily the fastest if you choose the SM tires. If you choose the GT tires it's right there with the Shelby 427, Cheetah and Vettes. The hard top Shelby's are off the pace. I haven't driven them either, but according to the AI, they're a second or more off the pace of the other 4 cars. Just a heads up since we have Bill, Tom and I think Mike running hard tops..

Everyone needs to download and install these. CM friendly! (and @Highbank they need to be installed on the server as well.)

Updates:
Cheetah- Total mass reduced to make it "nearly" as fast as the 427 Shelby. Shaders so it looks better both outside and inside the car. Tire wear, brake temps.
Vettes- Shaders, so you can paint the stingray and so they look better from outside and inside the car. Setup option to adjust brake force/bias, Tire wear, brake temps.

Great info @M_Nesevitch!

Couple of questions ...
What track(s) did you do the testing?
Did you also test the Daytona?

Apparently we're on the same wavelength, today I spent quite a bit of time doing the same, but with myself as the test driver instead of AI. I tested all the cars at Road America, since that's where we'll be Tuesday. My results, very similar to yours:

After a fair amount of setup work, I was fastest in the Daytona. @phantom17 and @wolfgang18, I found that knocking the brake power down to around 87% really helped stability slowing from high speeds, which this car can definitely achieve. I had to brake a little earlier in it than any of the other cars, due to the entry speed.

After that, the E-Type, 427 Cobra, Cheetah, and Corvette were very close, with ease of driving in that order. I didn't notice there was a tire option on the E-Type, I just went with whatever was default (assuming GT?), though it did take a little time to adjust to it's 5-speed.

The Cobra 289 was by far the most stable and easiest to drive, but a decent amount off the pace, around 5s slower on this track. I tried some gearing changes, but it just doesn't have enough grunt to get it there.

I tested at Mosport.. Should of did Road America.. DOH!! x'D I did not test with the Daytona.. Not even sure which car that is, but I'll look back in the thread and see if I can find it.

* I was most likely using the "Legion" Daytona.. I just clicked the Shelby icon and loaded the cars that were in there. The AD Daytona may be listed under another section of Assetto Corsa? How was it, compared to the other cars? If someone who knows what they're doing gets in the Cheetah or possibly that E Type, they could check out.. I turned a lap in the Cheetah that was a second faster then the Vettes, and I drove those Vettes -A LOT- trying to get the shaders and stuff correct. But like I said, according to the AI they should be close. I just can't really control the Vettes. Have to have that egg under the gas pedal, for sure.

The few laps I took were around 2:45 range, so you should be at least eight to ten seconds fast to be in the "normal" Mick speed range.
